For the Almond Flour Pizza Dough

  • 2 Cups Almond Flour
  • 2 Pieces Eggs
  • 2 Tablespoons Coconut Oil
  • 1 Teaspoon Salt

For the Toppings

  • 1 Cup Blanched Spinach
  • 1 Cup Mozzarella Cheese

Instructions

  • Mix all ingredients for the pizza dough in a bowl.

  • Prepare a baking pan by brushing lightly with coconut oil and dusting with extra almond flour.

  • Roll out the dough onto the prepared pan.

  • Bake the crust for 8 minutes at 350F.

  • Take the crust out of the oven and put on your toppings.

  • Bake for another 10 minutes.

Almonds do have a distinct nutty flavor that you wouldn’t get from any other nut or grain. This crust also has that rich flavor that I surprisingly liked for something savory like a pizza. So, this recipe with almond flour gets a definite “two-thumbs-up” for me flavorwise.

Just to make sure my crust releases without any problem after baking, I’ve brushed my pan with a bit of coconut oil and dusted it with a little more almond flour. Those bits of almond flour will also toast up nicely as this crust bakes, giving it much more nutty goodness.

I was really surprised to see this dough come out looking like some rustic bread after a short prebake in the oven – crisp on the surface and with a very nice light brown color.

I could smell right away from the oven that this crust was gonna be tasty on its own. Making that flavor stand out for this pizza was definitely the right thing to do. A simple Florentine-inspired topping of some blanched spinach leaves and some mild cheese would be an excellent choice I believe. As a bonus, this choice of toppings is definitely keeping this pizza on the low-side of the carbs scale.
